    • ¼ teaspoon black pepper

    • 1 large egg

    • ½ cup buttermilk

    • 1 cup panko breadcrumbs

    • Cooking oil spray

  1. In a shallow bowl, whisk together the flour, baking powder, garlic powder, paprika, kosher salt, and black pepper. In a second bowl, whisk the egg and buttermilk until smooth. Place the panko breadcrumbs in a third shallow bowl.
  2. Cut the chicken breasts into 1-inch bite-sized pieces and pat them dry with paper towels.
  3. Coat each piece of chicken in the seasoned flour, dip it into the egg mixture, then press it firmly into the panko breadcrumbs until evenly coated.
  4. Preheat the air fryer to 400°F. Arrange the breaded chicken in a single layer in the air fryer basket and lightly spray with cooking oil.
  5. Air fry for 10–12 minutes, flipping the chicken halfway through and spraying the second side lightly with oil. Cook until golden brown and the internal temperature reaches 165°F.
  6. Transfer the popcorn chicken to a serving platter and serve immediately with Viral Pickle Dip, ranch, honey mustard, or your favorite dipping sauce.
