Ingredients
- Whole grain bread: 4 slices
- Avocado: 2 medium avocados
- Eggs: 4 large eggs
- Turkey bacon or regular bacon: 8 slices
- Salt: to taste
- Black pepper: to taste
- Red pepper flakes (optional): to taste
- Fresh lemon juice (optional): 1 tablespoon
- Fresh herbs (e.g., cilantro or parsley, optional): for garnish
Instructions
Step 1: Prepare the Ingredients
- Gather all ingredients: Make sure you have everything at hand before you start.
- Wash the avocados: Rinse the avocados under cool water and pat them dry.
Step 2: Cook the Bacon
- Heat a skillet: Place a large skillet on medium heat.
- Add Bacon: Lay the strips of bacon in the skillet. If you’re using turkey bacon, remember it may cook faster.
- Cook the bacon: Cook on one side until crispy, about 4-5 minutes. Use tongs to flip the bacon and cook the other side until crispy, another 3-4 minutes.
- Drain the bacon: Once cooked, remove the bacon from the skillet and place it on a plate lined with paper towels to absorb excess grease.
Step 3: Toast the Bread
- Toast the slices: While the bacon is cooking, you can toast the whole grain bread. You can use a toaster or an additional skillet. If using a skillet, lightly butter or spray the pan with non-stick cooking spray and toast the bread on medium heat for about 2-3 minutes on each side, until golden brown.
Step 4: Prepare the Avocado
- Cut the avocados: Cut each avocado in half and remove the pit. Use a spoon to scoop the flesh out of the skins into a bowl.
- Mash the avocados: Using a fork or potato masher, mash the avocado to your desired consistency (smooth or chunky).
- Season the avocado: Add salt and pepper to taste. If using, stir in fresh lemon juice to prevent browning and enhance flavor.
Step 5: Cook the Eggs
- Use the same skillet: If there’s leftover bacon fat, you can use it to cook the eggs for added flavor. Remove excess grease if necessary.
- Add the eggs: Crack an egg into the skillet for each piece of toast and cook on medium-low heat. You can cook them sunny side up (about 2-3 minutes until the whites are set) or scrambled (stir continuously until fully cooked).
- Season the eggs: While cooking, season the eggs with salt and black pepper.
Step 6: Assemble the Toast
- Spread the avocado: Take one slice of toasted bread and spread a generous amount of mashed avocado on top.
- Add bacon: Place two slices of bacon on top of the avocado layer.
- Top with an egg: Carefully place one cooked egg on top of the bacon.
- Season the toast: Optional: Sprinkle with red pepper flakes for some heat and additional salt and pepper, if desired.
Step 7: Garnish and Serve
- Garnish: If using, chop fresh herbs (like cilantro or parsley) and sprinkle them on top of each toast.
- Serve immediately: Plate the toasts and serve them warm for a delicious breakfast or brunch!
