Description

An easy savory puff pastry tart layered with smoky bacon, creamy mozzarella and thinly sliced potatoes. The pastry bakes until flaky and golden while the potatoes become tender, making it perfect for brunch, lunch, a light dinner or an appetizer.

  • 3 medium potatoes, thinly sliced
  • 1 sheet ready-made puff pastry
  • 150 g bacon, sliced
  • 100 g mozzarella, sliced or shredded
  • 3 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

1. Prepare the Potatoes
Thinly slice the potatoes and place them in a bowl of cold water for 10 minutes. Drain thoroughly and pat completely dry with a clean kitchen towel or paper towels.

2. Prepare the Puff Pastry
Preheat the oven to 400°F (200°C). Place the puff pastry on a parchment-lined baking sheet and prick the surface with a fork.

3. Add the Bacon
Arrange the sliced bacon evenly over the puff pastry.

4. Add the Mozzarella
Scatter the mozzarella evenly over the bacon.

5. Layer the Potatoes
Arrange the drained and thoroughly dried potato slices over the mozzarella, slightly overlapping them without creating several thick layers.

6. Season
Drizzle with olive oil and season lightly with salt and freshly ground black pepper. Add fresh thyme or rosemary, if using.

7. Bake
Bake at 400°F (200°C) for 25–30 minutes, or until the potatoes are tender, the mozzarella has melted and the puff pastry is crisp and golden brown.

 

8. Rest and Serve
Allow the tart to cool slightly before slicing. Serve while the puff pastry is still warm and crisp.

  • Slice the potatoes thinly and as uniformly as possible so they become tender before the pastry gets too dark.
  • Thoroughly dry the potatoes after soaking. Excess moisture can prevent the puff pastry from becoming crisp.
  • Go lightly with additional salt because both the bacon and mozzarella contribute saltiness.
  • A mandoline makes uniformly thin potato slices easier, but a sharp knife works too.
  • For extra flavor, add fresh thyme, rosemary, Parmesan or smoked mozzarella.
  • For leftovers, reheat in the oven or air fryer rather than the microwave to help restore the crisp pastry texture.
