Description

Black Bean Spiced Sweet Potato Quesadillas are an incredibly easy and rewarding dish to make, making them an ideal choice for family dinners. The preparation involves simple steps: boiling or roasting sweet potatoes, sautéing fresh vegetables, and combining delightful flavors from black beans and spices.

Ingredients

For the Quesadillas:

    • Sweet potatoes: 2 medium (about 1 pound)

    • Canned black beans: 1 can (15 oz), drained and rinsed

    • Whole wheat tortillas: 4 large (whole grain or gluten-free, if preferred)

    • Red bell pepper: 1 (diced)

    • Onion: 1 medium (diced)

    • Garlic: 2 cloves (minced)

    • Cumin: 1 teaspoon

    • Chili powder: 1 teaspoon

    • Smoked paprika: 1 teaspoon (optional)

    • Olive oil: 1 tablespoon (for cooking)

    • Cheddar cheese or a dairy-free alternative: 1 cup (shredded, optional)

    • Fresh cilantro: ¼ cup (chopped, optional for garnish)

    • Avocado: 1 (sliced, for serving)

    • Lime: 1 (cut into wedges for serving)

    • Salt and pepper: to taste

Instructions

Step 1: Prepare the Sweet Potatoes

  1. Peel and Cut: Peel the sweet potatoes and cut them into small, even-sized cubes (about 1-inch).
  2. Cook:
    • Boiling Method: Place the cubed sweet potatoes in a pot of salted water. Bring to a boil and cook for about 10-15 minutes, or until fork-tender. Drain and set aside.
    • Roasting Method (Optional for Added Flavor): Alternatively, you can roast the sweet potatoes. Preheat your oven to 425°F (220°C). Toss the cubed sweet potatoes with a little olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes, stirring halfway through, until tender and slightly caramelized.

Step 2: Prepare the Black Bean Mixture

  1. Sauté Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and red bell pepper and sauté for about 5-7 minutes until softened.
  2. Add Garlic and Spices: Stir in the minced garlic, cumin, chili powder, smoked paprika (if using), salt, and pepper. Sauté for an additional 1-2 minutes until the garlic is fragrant.
  3. Add Black Beans: Add the drained black beans to the skillet and stir to combine. Cook for about 3-4 minutes until heated through. Remove from heat and set aside.

  1. Step 3: Cut the Sweet potatoes into small cubes

      1. Cook: Cook the cubed sweet potatoes. Season with salt and pepper to taste.

Step 4: Assemble the Quesadillas

  1. Heat Skillet: Wipe the skillet clean and return it to the stove over medium heat.
  2. First Tortilla: Place one whole wheat tortilla in the skillet. On one half of the tortilla, spread a portion of sweet potatoes (about ¼ cup) and top with a portion of the black bean mixture (about ¼-½ cup). If using cheese, sprinkle some shredded cheese on top of the bean mixture.
  3. Fold Tortilla: Fold the tortilla in half over the filling and gently press down with a spatula. Cook for 2-3 minutes, or until the bottom is golden brown.
  4. Flip: Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden brown and the cheese is melted.

Step 5: Repeat

  1. Repeat Process: Repeat the assembly and cooking process for the remaining tortillas and filling. You should be able to make 4 quesadillas total.

Step 6: Serve

  1. Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges.
  2. Garnish and Accompaniments: Serve warm, garnished with
