Instructions
Peel and grate half of your potatoes, then squeeze out any excess moisture using a clean kitchen towel. Mash the other half until smooth. Combining both grated and mashed potatoes is the secret to Boxty’s signature texture.
In a large bowl, combine the grated and mashed potatoes. Add the flour, baking soda, salt, and buttermilk. Mix until you have a thick, pancake-like batter. If the mixture feels too dry, add a splash more buttermilk.
Heat a skillet or griddle over medium heat and add a knob of butter or a drizzle of oil. Spoon the batter onto the skillet, forming small pancakes. Cook for 3-4 minutes on each side, or until golden brown and crispy.
Serve your Boxty hot off the griddle with your favorite toppings. Traditional options include butter, sour cream, or applesauce, but feel free to get creative!
