  • 1 large egg

  • ⅓ cup breadcrumbs (or oat flour for gluten-free)

  • 2 tbsp grated onion or finely chopped scallions

  • 1 clove garlic, minced

  • Oil for frying (olive or avocado oil)

For the Tzatziki Sauce:

  • ¾ cup Greek yogurt

  • ½ cucumber, grated and squeezed dry

  • 1 tbsp lemon juice

  • 1 clove garlic, minced

  • 1 tbsp fresh dill, chopped (or 1 tsp dried)

  • Salt and pepper to taste

Step 1: Roast the Butternut Squash

  1. Preheat oven to 400°F (200°C).

  2. Toss cubed squash with olive oil, salt, pepper, paprika, and cumin.

  3. Spread on a baking sheet and roast 25–30 minutes, stirring once, until soft and caramelized.

  4. Let cool slightly, then mash with a fork until smooth.


Step 2: Make the Fritter Mixture

  1. In a mixing bowl, combine mashed squash, egg, breadcrumbs, onion, and garlic.

  2. Stir until the mixture holds together — add more breadcrumbs if it’s too soft.

  3. Taste and adjust seasoning.


Step 3: Form and Fry the Fritters

  1. Heat a non-stick skillet over medium heat with 2–3 tbsp oil.

  2. Scoop about 2 tablespoons of mixture per fritter and flatten slightly with a spatula.

  3. Cook 3–4 minutes per side, or until deep golden and crisp at the edges.

  4. Transfer to paper towels to drain.


Step 4: Make the Tzatziki Sauce

  1. In a bowl, mix together Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper.

  2. Chill until ready to serve.
