Ingredients

-1 pound boneless, skinless chicken breast
-¼ teaspoon salt
-¼ teaspoon black pepper
-1 tablespoon extra-virgin olive oil
-For the Caprese salad:
- 2 avocados sliced in half
-1 pint cherry tomatoes, halved
-8 ounces of fresh mozzarella cheese, cubed
-¼ cup chopped fresh basil leaves
-3 tablespoons balsamic vinegar
-2 tablespoons extra-virgin olive oil
-¼ teaspoon salt
-¼ teaspoon black pepper


Instructions

  • preheating your grill to medium-high heat.
  • Season the chicken breasts with salt and pepper,
  • then brush with olive oil.
  • Grill for 6 to 8 minutes per side, or until cooked through.
  • Allow the chicken to rest for 5 minutes before cutting.
  • Next, prepare the Caprese salad by combining the cherry tomatoes, avocado, mozzarella cheese, and basil leaves in a large bowl.
  • In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper.
  • Pour this over the salad and gently toss to coat.
  • To assemble the bowls, divide the salad among four bowls and top with chicken. Serve immediately. Enjoy!
