Ingredients
-1 pound boneless, skinless chicken breast
-¼ teaspoon salt
-¼ teaspoon black pepper
-1 tablespoon extra-virgin olive oil
-For the Caprese salad:
- 2 avocados sliced in half
-1 pint cherry tomatoes, halved
-8 ounces of fresh mozzarella cheese, cubed
-¼ cup chopped fresh basil leaves
-3 tablespoons balsamic vinegar
-2 tablespoons extra-virgin olive oil
-¼ teaspoon salt
-¼ teaspoon black pepper
Instructions

- Season the chicken breasts with salt and pepper,

- Grill for 6 to 8 minutes per side, or until cooked through.
- Allow the chicken to rest for 5 minutes before cutting.

- In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper.
- Pour this over the salad and gently toss to coat.
