Ingredients

  • 2 cups cooked beans, mashed (black, pinto, or cannellini)

  • 1 jalapeño, finely diced (seeds optional)

  • 1 cup shredded cheddar cheese, divided

  • ½ cup sour cream

  • Pinch of salt and pepper

  • Optional garnishes: extra jalapeño slices, chopped cilantro

  • Serve with: tortilla chips, crackers, or veggie sticks


Step 1: Prep the Ingredients

  • Mash 2 cups cooked beans until mostly smooth, leaving a bit of texture.

  • Finely dice 1 jalapeño (remove seeds for less heat).

  • Preheat your oven to 350°F (175°C) if baking the dip.


Step 2: Layer the Dip

  • Spread half of the mashed beans evenly in a small casserole dish.

  • Top with ½ cup shredded cheddar cheese and a few diced jalapeño pieces.

  • Spread the remaining mashed beans on top to form a second layer.


Step 3: Add Cream & Cheese

  • Spoon ½ cup sour cream evenly over the top layer.

  • Sprinkle with the remaining ½ cup shredded cheddar cheese.


Step 4: Bake & Serve

 

  • Bake in the oven for 15–20 minutes, until the cheese is melted, bubbly, and slightly golden.

  • Remove from oven and let cool for a few minutes.

  • Garnish with extra jalapeño slices or chopped cilantro.

  • Serve immediately with tortilla chips, crackers, or veggie sticks.
