Ingredients

Filling Ingredients:

4 medium potatoes, sliced into 1/4” slices

1-1/2 c. Half & half

1 t. Ground nutmeg

Kosher salt, to taste

Freshly ground black pepper, to taste

 

Dough Ingredients:

2 large eggs

2 c. all purpose flour

3 t. baking powder

1 t. salt

1/2 c. butter, cold and cut into small cubes

1/2 c. milk

1/2 c. mozzarella, shredded

1/4 c. grated parmesan

 


Instructions

  1. Preheat the oven to 400°F.

  2. Lightly grease a 9” pie plate.

  3. Add sliced potatoes, half & half, nutmeg, salt and pepper, to taste.  Combine well.

  4. Place pie dish in oven and bake for 20 minutes.

  5. Meanwhile, prepare cobbler dough.

  6. In a large bowl combine flour, baking powder and salt.

  7. Cut in the butter pieces with a pastry blender, 2 forks or with your hands until the mixture becomes crumbly.

  8. Add milk to the bowl and stir with a wooden spoon. Stir in one egg at a time.

  9. Once eggs are combined into mixture, mix in the mozzarella and parmesan cheeses.

  10. Remove potatoes from oven and let cool for 5 minutes.

  11. Drop dough by spoonfuls onto the potatoes.

  12. Bake 20-25 minutes until the cobbler mixture is golden brown and potatoes and soft and cooked through.

Notes

Cobbler is typically thought of as a warm, delicious fruit dessert.  We decided to change it up a bit and create this savory version that is hot, cheesy and the perfect comfort food addition to any dinner.
