Description

Chicken Piccata is a delightful Italian-American dish that has become a family favorite due to its mouth-watering flavors and straightforward preparation. The dish typically features tender chicken breast fillets that are lightly floured and sautéed until golden brown, then simmered in a luscious sauce made from butter, lemon juice, capers, and white wine.

Ingredients

    1. Chicken breasts: 4 medium-sized (about 6 oz each)

    1. Salt: 1 teaspoon

    1. Black pepper: 1/2 teaspoon

    1. All-purpose flour: 1/2 cup (for dredging)

    1. Olive oil: 2 tablespoons

    1. Unsalted butter: 4 tablespoons (divided)

    1. Garlic: 4 cloves (minced)

    1. Chicken broth: 1 cup

    1. Lemon juice: 1/4 cup (freshly squeezed)

    1. Capers: 2 tablespoons (drained)

    1. Parsley: 2 tablespoons (chopped, for garnish)

    1. Lemon slices: for garnish (optional)

Instructions

    1. Prepare the Chicken:
        • Place the chicken breasts between two pieces of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness (about 1 inch).

        • Season both sides of the chicken breasts with salt and black pepper.

    1. Dredge the Chicken:
        • Spread the flour on a plate and dredge each chicken breast in flour, shaking off the excess.

    1. Cook the Chicken:
        • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

        • Add 2 tablespoons of butter. Once the butter melts and begins to bubble, add the chicken breasts.

        • Cook the chicken for about 3-4 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

    1. Make the Sauce:
        • In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

        • Pour in the chicken broth and lemon juice, scraping the bottom of the pan to release any browned bits.

        • Add the capers and bring the sauce to a simmer. Let it reduce for about 5 minutes.

    1. Finish the Sauce:
        • Stir in the remaining 2 tablespoons of butter until melted and the sauce thickens slightly.

    1. Combine Chicken and Sauce:
        • Return the chicken to the skillet and spoon the sauce over the top to coat. Let it cook for an additional 2-3 minutes to reheat the chicken.

    1. Serve:
        • Transfer the chicken to a serving platter. Drizzle with the pan sauce and garnish with chopped parsley and lemon slices if desired.

        • Serve immediately with pasta, rice, or vegetables for a complete meal.

Enjoy your delicious Chicken Piccata!
