    • Bell Peppers: 2, any color, sliced

    • Zucchini: 2 medium, sliced

    • Mushrooms: 8 ounces, sliced

    • Low-sodium Chicken Broth: 1/2 cup

    • Salt: to taste

    • Black Pepper: to taste

    • Dried Italian Herbs (or a mix of basil, oregano, thyme): 1 teaspoon

    • Lemon Juice: 2 tablespoons (optional, for added flavor)

    • Fresh Parsley: a handful, chopped (for garnish)

These portions should be enough to serve four people. Adjust seasoning according to your taste preference.


Instructions

    1. Prepare the Ingredients:
        • Wash and slice all the vegetables: slice the onion, bell peppers, and zucchini, and clean and slice the mushrooms.

        • Mince the garlic.

        • Cut the chicken breasts into bite-sized pieces and season with salt and black pepper.

    1. Sauté the Chicken:
        • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

        • Add the chicken pieces to the skillet and cook for about 5-7 minutes, or until the chicken is browned and cooked through.

        • Remove the chicken from the skillet and set aside on a plate.

    1. Cook the Vegetables:
        • In the same skillet, add the remaining one tablespoon of olive oil.

        • Add the sliced onion and garlic, and sauté for about 2 minutes until fragrant and the onion softens.

        • Add the sliced bell peppers, zucchini, and mushrooms to the skillet.

        • Season the vegetables with salt, pepper, and the dried Italian herbs.

        • Continue to sauté the vegetables for about 5-7 minutes, or until they are tender and start to caramelize.

    1. Combine Chicken and Vegetables:
        • Return the cooked chicken back to the skillet.

        • Pour the chicken broth over the chicken and vegetable mixture.

        • Stir everything together to combine.

        • If desired, add lemon juice for extra flavor and mix well.

    1. Simmer and Finish:
        • Reduce the heat to low and let the mixture simmer for an additional 2-3 minutes to allow the flavors to meld together.
