How to Make Cottage Cheese Egg Bites
Step 1 — Preheat the Oven
Preheat the oven to 350°F (175°C) and grease a standard muffin tin.

Step 2 — Blend the Eggs and Cottage Cheese
Add the 6 eggs and 1 cup cottage cheese to a blender.
Blend until completely smooth. This creates the creamy base that gives these egg bites their soft texture.
Step 3 — Add the Mix-Ins
Stir in:
Cheddar cheese
Spinach
Bell pepper, if using
Cooked turkey bacon or ham
Garlic powder
Salt and pepper
🚫 Avoid This Mistake: The turkey bacon or ham should already be cooked before adding it to the mixture.
Step 4 — Fill the Muffin Cups
Divide the mixture evenly among the prepared muffin cups.
Give the mixture an occasional stir as you work so the vegetables, cheese, and meat don't all settle at the bottom of the bowl.
Step 5 — Bake
Bake for 22–25 minutes, or until the centers are fully set.
