Ingredients:
- 1 Cup Pearl Couscous
- Sea Salt, to taste
- 2 Granny Smith Apples
- 1 cup Italian Parsley, chopped
- 1 cup Fresh Dill, chopped
- 6 to 8 leaves of fresh mint, chopped
- 6 to 8 leaves of fresh basil, chopped
- 1 lemon, juiced
- ¼ cup extra virgin olive oil
Instructions
- Cook couscous according to the instructions on the package. Use a small amount of salt in the water. Couscous should be cooked until it is almost done, but still a little firm. When it is finished cooking, set it aside.
- In a large bowl, add apples, parsley, dill, mint, and basil. Toss to combine.
- Take couscous and add it to the bowl. Then, mix in the apple and herb mixture.
- To make the dressing, mix lemon juice, olive oil, and salt in a small bowl or jar.
- Pour the dressing over the salad mixture and gently stir together.
- Serve immediately. Enjoy
