This couscous apple salad is a perfect side dish for any meal. It's quick and easy to make, and it's packed with flavor. The combination of sweet apples and savory couscous is delicious, and the addition of zesty lemon juice takes this salad to the next level.

  • 1 Cup Pearl Couscous
  • Sea Salt, to taste
  • 2 Granny Smith Apples
  • 1 cup Italian Parsley, chopped
  • 1 cup Fresh Dill, chopped
  • 6 to 8 leaves of fresh mint, chopped
  • 6 to 8 leaves of fresh basil, chopped
  • 1 lemon, juiced
  • ¼ cup extra virgin olive oil


  • Cook couscous according to the instructions on the package. Use a small amount of salt in the water. Couscous should be cooked until it is almost done, but still a little firm. When it is finished cooking, set it aside.
  • In a large bowl, add apples, parsley, dill, mint, and basil. Toss to combine.
  • Take couscous and add it to the bowl. Then, mix in the apple and herb mixture.
  • To make the dressing, mix lemon juice, olive oil, and salt in a small bowl or jar.
  • Pour the dressing over the salad mixture and gently stir together.
  • Serve immediately. Enjoy
