Description

Get ready for a taste sensation that'll have you coming back for seconds - Creamy One Pot Mushroom and Herb Rice! This dish is a delightful medley of flavors, with earthy mushrooms, fragrant herbs, and creamy goodness all cooked together in one pot for ultimate convenience.


Ingredients

1 T. Extra virgin olive oil
1 Medium onion, diced
3 Garlic cloves, thinly sliced
10 oz. Mushrooms, sliced
1 t. Dried thyme
1 c. Short grain rice, rinsed and drained
2 c. Vegetable stock
2 T. Butter
1/4 c. Heavy cream
1/2 c. parsley, chopped
Sea salt and black pepper, to taste


Instructions

  1. Heat olive oil in a medium pot over medium heat.

  2. Add onion, garlic, and mushrooms. Season to taste with salt and pepper. 

  3. Cook, stirring occasionally, until the mushrooms develop some color, approximately 5-6 minutes. 

  4. Add the dried thyme and the rice.

  5. Continue cooking until the thyme becomes fragrant, 1-2 minutes.

  6. Add the vegetable stock and increase the heat to high. 

  7. Bring the rice to a boil, then immediately reduce the heat down to medium low and cover with a lid. 

  8. Let the rice simmer for 10 minutes then turn the heat off and let the rice sit covered for 5 minutes.

  9. Uncover and fluff the rice with a fork. 

  10. Stir in the butter, heavy cream, and parsley. 

  11. Taste and adjust the seasoning if desired.
