The smooth and creamy brie cheese perfectly complements the tangy and refreshing homemade orange-cranberry relish, all resting on a delectably toasted crostini.

Crostini Ingredients:

 

1 long, thin baguette, cut into 1/3” slices
3 T. unsalted butter, melted 

8 oz. Brie cheese, rind removed and cut into thin slices 

 

Cranberry relish Ingredients:

12 oz. bag fresh cranberries
1/2 c. white sugar
2 T. real maple syrup

3/4 c. fresh orange juice
2 t. fresh ginger, finely minced
1 t. ground cinnamon

T. orange zest, preferably organic

 


Instructions

  1. Preheat oven to 350°F and line a large, rimmed baking sheet with parchment paper or a Silpat™ baking sheet. Arrange the baguette slices on the prepared baking sheet and brush with the melted butter. 

 

  1. Place the baking sheet in pre-heated oven and bake until golden brown, approximately 7-9 minutes. Remove from oven and place a small slice of Brie on each crostino while it is still warm. 

 

  1. While the bread is toasting, combine the cranberries, sugar, maple syrup, orange juice, ginger, cinnamon and orange zest in a large saucepan. Cook over medium heat, stirring frequently, for 10-12 minutes or until the cranberries “pop.” 

     

  2. Remove from heat and cool for several minutes. Spoon some of the warm cranberry relish over each crostino and serve immediately. Enjoy!
