Description

As autumn arrives, the air gets crisp, and leaves change colors. This is the perfect time for cozy desserts. Pumpkin cobbler is a seasonal favorite that combines pumpkin's creamy taste with a warm cobbler topping. It's a perfect mix of autumn's best flavors.

Ingredients

Scale

    • 1 (15 oz) can pumpkin puree

    • 1 (14 oz) can sweetened condensed milk

    • 2 large eggs

    • 1 teaspoon ground cinnamon

    • 1/2 teaspoon ground ginger

    • 1/4 teaspoon ground nutmeg

    • 1/4 teaspoon salt

    • 1 cup all-purpose flour

    • 1/2 cup granulated sugar

    • 2 teaspoons baking powder

    • 1/2 cup unsalted butter, melted

Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 350°F (175°C). This will ensure that your cobbler cooks evenly.

Step 2: Prepare the Baking Dish

    • Grease a 9x9 inch (or a similarly sized) baking dish with cooking spray or a little melted butter to prevent sticking.

Step 3: Mix the Wet Ingredients

    1. Combine the sweetened condensed milk and the eggs in a medium-sized mixing bowl.

    1. Whisk together until the mixture is smooth and well combined.

Step 4: Add the Spices

    • Add the ground cinnamon, ground ginger, ground nutmeg, and salt to the wet ingredients. Stir well to evenly distribute the spices.

Step 5: Combine Dry Ingredients

    1. Whisk together the all-purpose flour, granulated sugar, and baking powder in a separate bowl.

    1. Make sure there are no lumps in the flour mixture.

Step 6: Combine Wet and Dry Ingredients

    • Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Be careful not to overmix; if there are a few small lumps, it's okay.

Step 7: Add Melted Butter

    • Pour the melted unsalted butter into the batter and fold it in until just combined. If you're adding pecans, stir in about 1/2 cup of chopped pecans at this point (reserve some for topping later if desired).

Step 8: Pour the Mixture into the Baking Dish

    • Pour the batter into the prepared baking dish, spreading it evenly.

Step 9: Add Topping

    • If you reserved some pecans, sprinkle them evenly over the batter.

Step 10: Bake

    • Place the baking dish in the preheated oven and bake for 30-35 minutes. The cobbler is done when it is golden brown on top and a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 11: Cool and Serve

    • Once baked, remove the cobbler from the oven and let it cool for about 10-15 minutes. This allows it to set up a bit more.

    • Serve warm, possibly with a scoop of ice cream or whipped cream if desired.
