Ingredients
2 c. rolled oats
3 c. milk
1 c. water
1/4 t. salt
1 t. pure vanilla extract
3 T. honey, divided (preferably local)
4 T. butter, melted
6 T. light brown sugar
1 T. ground cinnamon
1 c. Greek yogurt
1/4 c. cream cheese, softened at room temperature
Instructions
Add oats, milk, and water to a medium saucepan and place over medium heat.
Cook, stirring occasionally, until the oats become thick and creamy, approximately 8-10 minutes.
Remove from heat and stir in salt, vanilla, and 2 tablespoons of honey.
In a small bowl, combine the melted butter, brown sugar, and cinnamon. Whisk until completely smooth and creamy.
In a separate small bowl, mix the Greek yogurt, cream cheese, and remaining honey until smooth and creamy.
Divide the oatmeal between 4 bowls and top with a dollop of brown sugar and cinnamon mixture. Swirl in a dollop of the cream cheese mixture and serve immediately.
