10 oz. frozen spinach, thawed and drained well
2 medium garlic cloves, thinly sliced
1 T. extra virgin olive oil
1 T. freshly squeezed lemon juice
1 c. ricotta
4 oz. crumbled feta cheese, divided
2 T. breadcrumbs
2 t. dried dill
1/2 t. dried oregano
Sea salt and freshly ground pepper, to taste

Preheat the Oven:
- Open your oven and set it to preheat at 375°F (190°C). Allow it to heat while you prepare your mixture.

Prepare the Spinach Mixture:
- In a medium bowl, start by adding the spinach. If you are using frozen spinach, make sure it is thawed and well-drained. For fresh spinach, wash, dry, and chop it if necessary.
- Add the minced garlic to the bowl.
- Pour in the olive oil and lemon juice.
- Next, add the ricotta cheese to the mixture.
- Measure out half of the crumbled feta cheese and add it to the bowl, reserving the other half for later.
- Add the breadcrumbs into the mixture.
- Sprinkle in the dill and oregano. If you're using fresh herbs, chop them finely before adding.
- Season the mixture with salt and pepper to taste.

- Using a spoon or spatula, stir all the ingredients in the bowl together until you have a well-combined and creamy mixture. Ensure the spinach is evenly distributed throughout.

Transfer to Casserole Dish:
- Take a casserole dish and lightly grease it with a little olive oil or cooking spray to prevent sticking.
- Carefully transfer the spinach mixture from the bowl to the casserole dish, spreading it out evenly.

- Take the remaining crumbled feta cheese and sprinkle it evenly over the top of the spinach mixture in the casserole dish.

- Once the oven is preheated, place the casserole dish in the oven.
- Bake for 20 to 25 minutes, or until the dish is hot, bubbling, and has a light golden brown color on top.

- Once baked, carefully remove the casserole dish from the oven using oven mitts, as it will be hot.
