Ingredients

Ingredients

10 oz. frozen spinach, thawed and drained well
2 medium garlic cloves, thinly sliced
1 T. extra virgin olive oil
1 T. freshly squeezed lemon juice
1 c. ricotta
4 oz. crumbled feta cheese, divided
2 T. breadcrumbs
2 t. dried dill
1/2 t. dried oregano
Sea salt and freshly ground pepper, to taste
Crackers, pita chips, or bread, for serving

Instructions

nstructions:

  1. Preheat the Oven:

    • Open your oven and set it to preheat at 375°F (190°C). Allow it to heat while you prepare your mixture.
  2. Prepare the Spinach Mixture:

    • In a medium bowl, start by adding the spinach. If you are using frozen spinach, make sure it is thawed and well-drained. For fresh spinach, wash, dry, and chop it if necessary.
    • Add the minced garlic to the bowl.
    • Pour in the olive oil and lemon juice.
    • Next, add the ricotta cheese to the mixture.
    • Measure out half of the crumbled feta cheese and add it to the bowl, reserving the other half for later.
    • Add the breadcrumbs into the mixture.
    • Sprinkle in the dill and oregano. If you're using fresh herbs, chop them finely before adding.
    • Season the mixture with salt and pepper to taste.
  3. Mix the Ingredients:

    • Using a spoon or spatula, stir all the ingredients in the bowl together until you have a well-combined and creamy mixture. Ensure the spinach is evenly distributed throughout.
  4. Transfer to Casserole Dish:

    • Take a casserole dish and lightly grease it with a little olive oil or cooking spray to prevent sticking.
    • Carefully transfer the spinach mixture from the bowl to the casserole dish, spreading it out evenly.
  5. Add Feta Topping:

    • Take the remaining crumbled feta cheese and sprinkle it evenly over the top of the spinach mixture in the casserole dish.
  6. Bake the Dish:

    • Once the oven is preheated, place the casserole dish in the oven.
    • Bake for 20 to 25 minutes, or until the dish is hot, bubbling, and has a light golden brown color on top.
  7. Remove from Oven:

    • Once baked, carefully remove the casserole dish from the oven using oven mitts, as it will be hot.
  8. Cool Before Serving:

    • Allow the dish to cool for about 5 minutes. This will make it easier to serve and will enhance the flavors.
  9. Serve:

    • After cooling, serve the casserole warm with your choice of dippers, such as pita chips, vegetable sticks, or toasted bread.

Enjoy your delicious spinach and feta casserole!
