Ingredients

  • -4 chicken breasts
  • -1 tbsp. olive oil
  • -½ head iceberg lettuce, chopped
  • -1 pint cherry tomatoes, halved
  • -½ cucumber, diced
  • -½ red onion, diced
  • -1 avocado, diced
    - ½ cup shredded cheddar or Mexican blend cheese
    - 1 jalapeño, minced (Optional)
    - 2 ounces black olives sliced
  • For the dressing:
  • -¼ cup olive oil
  • -¼ cup white vinegar
  • -1 clove of garlic, minced
  • -1 tsp. honey
  • -½ tsp. salt
  • -¼ tsp. black pepper

Instructions

To make the Grilled Chicken Taco Salad, start by

  • preheating your grill to medium heat.
  • Season the chicken breasts with olive oil and salt and pepper to taste.
  • Grill the chicken for about 6 minutes per side, or until cooked through.
  • Remove from grill and let cool before chopping into bite-sized pieces.
  • In a large bowl, combine chopped lettuce, olives, tomatoes, jalapeño, cucumber, red onion, avocado, and grilled chicken.
  • Drizzle with cheese and dressing and serve immediately.
