🥐 Ingredients for Ham, Bacon, and Cheese Puff Pastry with Sesame Seeds

Prep Time: 15 minutes
Cook Time: 25-30 minutes
Total Time: 40-45 minutes
Servings: 12 pastries
Calories: ~200 per pastry

Pastry Filling:

  • 1 sheet puff pastry, thawed but still cold
  • 34 slices ham (thinly sliced)
  • 23 strips cooked bacon, crumbled
  • ½ cup shredded cheese (cheddar, gruyère, or mozzarella)
  • 1 tsp Dijon mustard (optional, for spreading)
  • 1 egg + 1 tsp water (egg wash)
  • 1 tbsp sesame seeds
  • 1 tbsp sunflower seeds (optional but matches the photo)
  • Fresh thyme or parsley, chopped (optional, for garnish)

Seasonings:

  • ½ tsp black pepper (1g)
  • ½ tsp garlic powder (1.5g)
  • 1 tbsp fresh chives, chopped (optional, 3g for freshness)

Instructions

🥐 Step-by-Step Ham, Bacon, and Cheese Puff Pastry Pinwheels with Sesame & Sunflower Seeds Step 1: Preheat and Prep the Pastry

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. On a lightly floured surface, roll out the thawed puff pastry into a 10x12-inch (25x30 cm) rectangle.
Tip: Keep the pastry cold — if it warms up too much, pop it back in the fridge for 5 minutes before filling.

Step 2: Prepare the Filling

In a bowl, mix crumbled cooked bacon and shredded cheese. Have your ham slices ready to layer on the pastry.
Tip: Choose a flavorful cheese like cheddar, gruyère, or mozzarella for melty perfection.

Step 3: Assemble the Pastry Log

Spread a very thin layer of Dijon mustard over the pastry (optional but delicious). Lay ham slices evenly across the pastry. Sprinkle bacon and cheese on top so it’s evenly distributed.

Starting at the long edge, roll the pastry into a tight log (jelly-roll style). Place the roll seam-side down and refrigerate for 10–15 minutes to firm it up — this makes cleaner slices.
Tip: Use a sharp serrated knife to prevent squishing the pastry when cutting.

Step 4: Slice into Pinwheels & Top

Slice the chilled pastry log into ½-inch thick rounds and lay them flat on the prepared baking sheet, leaving space between each pinwheel.

Whisk together the egg and 1 tbsp water to make an egg wash. Brush each pinwheel with egg wash and sprinkle with sesame seeds and sunflower seeds for extra crunch and a pretty finish.
Tip: Toast the seeds beforehand for a deeper nutty flavor.

Step 5: Bake the Pinwheels

Bake for 15–18 minutes, or until golden brown, puffed, and crisp. Rotate the pan halfway through for even baking.

Remove from oven and let cool slightly before serving. Garnish with chopped fresh thyme or parsley if desired.
