  • 1 can of chickpeas, drained and rinsed
  • ¼ cup sliced Kalamata or black olives, 
  • 1 cucumber, diced
  • lemon juice,
  • ½ cup cherry tomatoes, halved diced
  • ½ cup of crumbled feta cheese,½ teaspoon dried oregano
  • ⅓ cup of extra virgin olive oil, 
  • add salt and pepper to taste.

  • - drain and rinse the chickpeas well. Then,
  • -  in a medium bowl or food processor, combine the drained chickpeas with the cucumber, olives, cherry tomatoes, and a drizzle of olive oil. 
  • - Mix until well combined.
  • - add in a squeeze of lemon juice, and oregano, along with some salt and pepper to taste
  • - Stir thoroughly until everything is evenly coated.
  • - Finally, transfer the chickpea mixture to a serving dish and sprinkle evenly with crumbled feta cheese.
