Makes: 4 main-dish servings or 6 side-dish servings
For the salad:
2 cans chickpeas, drained and rinsed
1 bunch asparagus, trimmed and cut into 2-inch pieces
4 to 5 radishes, thinly sliced
2 pita breads, cut or torn into triangles
1/3 cup chopped pistachios
1/3 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
2 tablespoons fresh mint, chopped, optional
1 tablespoon olive oil, for cooking the asparagus
Salt and black pepper, to taste
For the lemon dressing:
1/4 cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 small garlic clove, grated or finely minced
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1/2 teaspoon sumac, optional but wonderful
1/2 teaspoon dried oregano

Extra lemon wedges
Extra herbs
Extra chopped pistachios
Extra toasted pita
Plain Greek yogurt or tahini sauce, optional
