Ingredients
12 oz. refrigerated cheese tortellini
1 small onion, finely diced
1/2 c. fresh parsley, chopped (reserve a small amount for finishing)
1/2 c. fresh basil, chopped (reserve a small amount for finishing)
2 c. marinara sauce, jarred or homemade
1/2 c. water
1 T. olive oil
1 1/2 c. shredded mozzarella cheese
1/2 c. shredded parmesan cheese
Sea salt and black pepper, to taste
Instructions
Preheat the oven to 375°F.
In a large casserole, mix together the tortellini, onion, parsley, basil, marinara, water, and olive oil. Season with salt and pepper to taste.
Cover with aluminum foil and place in the oven to bake for 15 minutes.
Remove from the oven, give the casserole a good mix, and cover with shredded mozzarella and parmesan.
Cover again with foil and return to the oven for another 10 minutes. Remove the foil and bake an additional 5 minutes or until the tortellini is al dente and the cheese is hot and bubbly.
Allow to cool for 5 minutes before serving. Garnish with fresh basil and parsley.
