Ingredients
Dry Ingredients
- 1 cup super-fine blanched almond flour
- ½ cup unsweetened Dutch-process cocoa powder
- ⅓ cup chocolate protein powder, preferably a whey-casein blend
- ½ cup erythritol or monk fruit sweetener formulated to replace sugar by volume
- ½ teaspoon baking powder
- ¼ teaspoon fine sea salt
Wet Ingredients
- 3 large eggs, at room temperature
- ¼ cup unsalted butter, melted and slightly cooled
- ¼ cup smooth almond butter
- ¼ cup full-fat Greek yogurt
- 1½ teaspoons pure vanilla extract
Optional Addition
- ⅓ cup sugar-free chocolate chips, plus additional chips for the top
- Nonstick cooking spray, for the pan
Instructions
Instructions
- Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two opposite sides. Lightly coat the exposed sides with nonstick cooking spray.
- In a medium bowl, whisk together the almond flour, cocoa powder, protein powder, sweetener, baking powder, and salt. Break apart any visible lumps.
- In a large bowl, whisk the eggs, melted butter, almond butter, Greek yogurt, and vanilla for approximately 2 minutes, or until smooth, creamy, and glossy.
- Add the dry ingredients to the wet mixture. Fold with a rubber spatula until no dry streaks remain. If using chocolate chips, fold them in while reserving a few for the top.
- Transfer the thick batter to the prepared pan. Spread it evenly into the corners and smooth the surface. Scatter the reserved chocolate chips over the top.
- Bake for 20–22 minutes. The edges should look set, while the center remains slightly soft. A toothpick inserted near the middle should come out with moist crumbs—not wet batter and not completely clean.
- Cool the brownies in the pan at room temperature for 20 minutes. Refrigerate them in the pan for another 30 minutes to set the fudgy center.
- Lift the chilled brownie slab from the pan using the parchment handles. Cut four rows in each direction to make 16 brownies. Wipe the knife between cuts for cleaner edges.
Notes
Notes
- Use super-fine blanched almond flour, not coarse almond meal.
- Do not replace almond flour with coconut flour using a one-to-one ratio.
- A whey-casein protein blend produces the most reliably fudgy texture.
- The batter should be thick and spreadable, not pourable.
- Do not wait for a completely clean toothpick; that usually means the brownies are overbaked.
- Chilling is part of the recipe and gives the brownies their dense, chewy texture.
- Store refrigerated for up to seven days or freeze for up to three months.
