All the savory flavors of an egg roll come together in this easy Egg Roll in a Bowl with ground turkey sausage, cabbage, carrots, scrambled eggs, garlic, ginger and sesame. A flavorful one-skillet meal that's ready in about 35 minutes.

- 1 lb ground turkey sausage
- 4 large eggs
- 3 cups coleslaw mix
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 1 tsp sriracha, optional
- 1 tbsp sesame oil
- ¼ cup green onions, sliced, optional for garnish
- 1 tsp sesame seeds, optional for garnish
- 1 tsp ground ginger
Instructions
1. Brown the turkey sausage.
Heat a large skillet over medium heat. Add the ground turkey sausage and cook until browned and fully cooked, breaking it into crumbles as it cooks. Remove from the skillet and set aside.
2. Scramble the eggs.
Lightly coat the same skillet with nonstick cooking spray or a small drizzle of oil if needed. Add the eggs and scramble until cooked through. Remove and set aside with the turkey.
3. Cook the aromatics.
Add the onion, garlic and ground ginger to the skillet. Cook over medium heat for 2–3 minutes, until fragrant and softened.
4. Cook the cabbage.
Add the coleslaw mix and cook for 5–7 minutes, stirring occasionally, until tender but still slightly crisp.
5. Combine.
Return the cooked turkey sausage and scrambled eggs to the skillet. Add the soy sauce and sriracha, if using. Stir until combined and heated through. Stir in the sesame oil.
6. Serve.
Divide among bowls and garnish with sliced green onions and sesame seeds, if desired.

Notes
For the best texture, avoid overcooking the coleslaw mix. The cabbage should be tender while retaining a little bite. Add more sriracha for additional heat, or substitute ground chicken, pork or beef for the turkey sausage.
