    • 1 cup fresh lime juice (about 68 limes)

    • 1 cup water

    • 1 cup granulated sugar

    • Pinch of salt


Instructions

  1. In a saucepan, combine the water and sugar.
  2. Heat over medium heat, stirring occasionally, until the sugar has dissolved completely.
  3. Remove from heat and let cool to room temperature.
  4. Juice the limes to yield 1 cup of fresh lime juice.
  5. Strain the juice to remove any seeds or pulp.
  6. Once the syrup has cooled, combine it with the fresh lime juice and a pinch of salt in a bowl.
  7. Stir well to combine.
  8. Pour the mixture into a shallow, freezer-safe dish.
  9. Place it in the freezer and allow it to freeze for about 1 hour.
  10. After 1 hour, use a fork to scrape the mixture, breaking up any ice crystals.
  11. Return to the freezer and repeat this process every 30 minutes until the sorbet is fully frozen and has a fluffy texture.
  12. Once the sorbet has reached the desired consistency, scoop it into bowls or glasses.
  13. Garnish with a slice of lime or a sprig of mint, if desired.
  14. Serve immediately and enjoy your refreshing homemade lime sorbet!
