- 1 cup fresh lime juice (about 6–8 limes)

- 1 cup granulated sugar

Instructions
- In a saucepan, combine the water and sugar.
- Heat over medium heat, stirring occasionally, until the sugar has dissolved completely.
- Remove from heat and let cool to room temperature.
- Juice the limes to yield 1 cup of fresh lime juice.
- Strain the juice to remove any seeds or pulp.
- Once the syrup has cooled, combine it with the fresh lime juice and a pinch of salt in a bowl.
- Stir well to combine.
- Pour the mixture into a shallow, freezer-safe dish.
- Place it in the freezer and allow it to freeze for about 1 hour.
- After 1 hour, use a fork to scrape the mixture, breaking up any ice crystals.
- Return to the freezer and repeat this process every 30 minutes until the sorbet is fully frozen and has a fluffy texture.
- Once the sorbet has reached the desired consistency, scoop it into bowls or glasses.
- Garnish with a slice of lime or a sprig of mint, if desired.
- Serve immediately and enjoy your refreshing homemade lime sorbet!
