Falafel is a traditional Middle Eastern dish that is typically made from chickpeas or fava beans. To make falafel, you will need

  • -1 cup of dried chickpeas (or fava beans),
  • -1 small onion,
  • -1 clove of garlic,
  • -1 teaspoon of cumin,
  • -1 teaspoon of coriander,
  • -½ teaspoon of salt,
  • -¼ teaspoon of black pepper,
  • -¼ cup of fresh parsley leaves, and
  • -¼ cup of fresh cilantro leaves.

NOTE: The most important step is to soak the beans overnight, which helps to soften them and make them easier to grind.

You will also need enough vegetable oil to fill a large frying pan to a depth of 3 inches.

To make the falafel mix, combine the chickpeas (or fava beans), onion, garlic, cumin, coriander, salt, pepper, parsley, and cilantro in a food processor or blender and process until the mixture is finely chopped.

- Shape the mixture into small balls or patties.

- Heat the oil in the frying pan over medium heat and fry the falafel balls or patties until they are golden brown on all sides.

Serve with tahini sauce or yogurt sauce and enjoy!
