Ingredients

- 1 pound of sea scallops
- 2 tablespoons of olive oil
- 1 tablespoon of butter
- Salt and pepper to taste
Instructions
- Thaw the scallops, if frozen
- Brine the scallops ( see above )
heat a large skillet over medium-high heat. - Add the olive oil and butter to the skillet and let it melt.
- Once the butter has melted, add the scallops to the pan.
- Make sure that the scallops are not touching each other in the pan so that they can sear evenly.
- Sear the scallops for 2-3 minutes per side, or until they are golden brown and cooked through.
- Season with salt and pepper to taste.
Serve immediately.
