For the Marinade & Skewers

    • 500 g (1 lb) large shrimp, peeled and deveined

    • 2 cups (300 g) fresh pineapple, cut into 1-inch chunks

    • 2 tablespoons olive oil

    • 2 tablespoons soy sauce (or tamari for gluten-free)

    • 2 tablespoons honey

    • 1 tablespoon fresh lime juice

    • 2 tablespoons sweet chili sauce

    • 2 cloves garlic, minced

    • 1 teaspoon fresh ginger, grated

    • ½ teaspoon chili flakes (adjust to taste)

    • ½ teaspoon salt

    • ¼ teaspoon black pepper

    • Fresh parsley or cilantro, chopped (for garnish)

    • Wooden skewers, soaked in water for 20–30 minutes

Optional Add-ins

    • Extra chili flakes or sriracha for more heat

    • 1 teaspoon sesame oil

    • Red bell pepper or red onion chunks

Instructions

Instructions

  • Prepare the Marinade: In a large mixing bowl, whisk together the olive oil, soy sauce, honey, lime juice, and sweet chili sauce. Stir in the minced garlic, grated ginger, chili flakes, salt, and pepper until the flavors are fully combined.
  • Marinate the Shrimp: Add the peeled and deveined shrimp to the bowl, tossing gently until every piece is thoroughly coated. Cover and let the shrimp marinate for 15–20 minutes to absorb the bold, zesty flavors.
  • Preheat: While the shrimp marinates, preheat your grill or a large grill pan over medium-high heat.
  • Thread the Skewers: Begin assembling the skewers by alternating between the marinated shrimp and fresh pineapple chunks.
  • Grill to Perfection: Carefully place the skewers onto the hot grill. Cook for approximately 2–3 minutes per side. The shrimp should turn a vibrant pink and become opaque, while the pineapple will begin to caramelize and show beautiful grill marks.
  • Garnish and Serve: Remove the skewers from the heat and arrange them on a serving platter. Sprinkle with fresh, finely chopped parsley and serve immediately for peak flavor.
