Instructions
- Prepare the Avocado:
- Cut avocados in half, remove the pit, and scoop out the flesh into a bowl.
- Add lemon juice, a pinch of salt, and black pepper to the avocado. Mash it to your desired consistency.
- Poach the Eggs:
- Bring a pot of water to a gentle simmer and add a splash of vinegar (optional, helps with egg poaching).
- Crack each egg individually into a small bowl, then gently slide it into the water.
- Poach the eggs for about 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk. Remove with a slotted spoon and drain on a paper towel.
- Toast the Bread:
- Toast the slices of bread until they are golden brown.
- Assemble the Toasts:
- Spread a generous amount of mashed avocado on each slice of toasted bread.
- Place a poached egg on top of the avocado.
- Drizzle a little olive oil over the top and sprinkle with red pepper flakes, if using.
- Garnish with fresh herbs, if desired.
