Ingredients

    • Eggs: 4 large eggs (1 egg per toast)

    • Avocado: 2 ripe avocados

Instructions

  1. Prepare the Avocado:

    • Cut avocados in half, remove the pit, and scoop out the flesh into a bowl.
    • Add lemon juice, a pinch of salt, and black pepper to the avocado. Mash it to your desired consistency.

  2. Poach the Eggs:

    • Bring a pot of water to a gentle simmer and add a splash of vinegar (optional, helps with egg poaching).
    • Crack each egg individually into a small bowl, then gently slide it into the water.
    • Poach the eggs for about 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk. Remove with a slotted spoon and drain on a paper towel.

  3. Toast the Bread:

    • Toast the slices of bread until they are golden brown.
