Description

Ratatouille is a French dish that typically includes eggplant, zucchini, and tomatoes. There are many different ways to make Ratatouille, but one of the most popular methods is to roast the vegetables in the oven. First, the eggplant and zucchini are sliced into thin strips and then roasted in a hot oven until they are slightly browned.

-1 eggplant

-1 zucchini

-2 small bell peppers (red/yellow/green)

-3 tomatoes

-1 onion

1 tsp fresh thyme leaves, chopped

-3 cloves of garlic

-1/4 cup of olive oil

-Salt and pepper to taste

Directions

To begin,

 

dice the eggplant, zucchini, bell peppers, and tomatoes into small pieces.

Then, peel and chop the onion and garlic.

In a large skillet or Dutch oven, heat the olive oil over medium heat.

Add the chopped onion, thyme, and garlic ( Sauté ) cook until softened.

Then, add the diced vegetables and cook until tender.

Season with salt and pepper to taste.

Ratatouille can be served hot or cold.
