4 c. baby spinach, rinsed and patted dry
1/2 red onion, thinly sliced
1 large orange, peeled and sliced
1 c. strawberries, sliced
Sea salt and black pepper, to taste
Dressing Ingredients
1/4 c. balsamic vinegar
3 T. extra-virgin olive oil
2 t. honey, preferably local
2 t. Dijon mustard
Sea salt and black pepper, to taste
Salad Topping Ingredients
1/4 c. walnuts, roughly chopped
2 oz. goat cheese, crumbled
Instructions
Layer the spinach, red onion, orange slices, and strawberries in a large salad bowl. Season with salt and pepper to taste.
In a small bowl, whisk together the balsamic vinegar, olive oil, honey, and Dijon mustard. Season to taste with salt and pepper.
Pour the dressing over the salad and toss.
Transfer the salad to a large serving platter or individual salad plates or bowls.
Top each serving with walnuts and crumbled goat cheese.
