So picture this: a bowl of roasted broccoli that's like a flavor explosion in your mouth. You've got those perfectly roasted florets, all crispy and caramelized, hanging out with some sweet and juicy apple slices that add this refreshing zing.
Ingredients
1 T. olive oil
4 c. broccoli florets, roughly chopped
1/2 c. Greek yogurt
2 T. mayonnaise
1 medium lemon, juiced
1 red onion, diced
1 apple, roughly chopped
1/2 c. pumpkin seeds, toasted
1/2 c. raisins
2 oz. goat cheese, crumbled
1/4 c. fresh parsley, chopped
Sea salt and black pepper, to taste
Instructions

Preheat the oven to 400° F.

On a large, rimmed baking sheet, toss the broccoli florets with olive oil. Season to taste with salt and pepper and toss again. Bake for 15-20 minutes or until broccoli is tender crisp and beginning to brown on the edges.

Remove from oven and set aside to cool for 5 minutes.

Meanwhile, in a small bowl, whisk together Greek yogurt, mayonnaise, and lemon juice. Season to taste with salt and pepper. Set aside.

In a large serving bowl add roasted broccoli, red onion, apple, pumpkin seeds, and raisins. Drizzle the creamy dressing over the top and toss to mix well.

Top the salad with the crumbled goat cheese and fresh parsley. Can be served warm, or chilled. Enjoy!
