Salmon Croquettes are a delicious and easy-to-make dish that is perfect for a weeknight meal.

 To make Salmon Croquettes, you will need: 

  • 1 pound of skinless, boneless Salmon ( preferably Wild Caught Salmon )
  • 2 eggs lightly beaten
  • 2 tablespoons of Dijon mustard
  • ½ cup gluten-free bread crumbs
  • 2 tablespoons of extra-virgin olive oil
  • ¼ teaspoon of salt ( to taste )
  • ¼ teaspoon pepper ( to taste )
  • ½ teaspoon garlic powder ( to taste )

Instructions

  • -In a large bowl, mix together the salmon, eggs, Dijon mustard, bread crumbs, salt, pepper, and garlic powder.
  • - Once everything is well combined, form the mixture into small patties.
  • -  In a large skillet over medium heat, add the olive oil and let it heat up for a minute. 
  • - Then add the Salmon Croquettes to the skillet and cook for about 4 minutes per side, or until they are golden brown and cooked through.
