    • 1 teaspoon cumin

    • 1 teaspoon smoked paprika

    • 1/2 teaspoon oregano

    • 1/2 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1 lime, juiced

    • 8 small flour tortillas

    • Fresh cilantro, chopped, for garnish

    • Optional toppings: sour cream, avocado slices, salsa, shredded cheese


Instructions

Step 1: Prepare the Vegetables and Shrimp

    1. Slice the Vegetables: Thinly slice the red, green, and yellow bell peppers, and the onion. Set aside.

    1. Season the Shrimp: In a bowl, toss the shrimp with 1 tablespoon of olive oil, minced garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Set aside to marinate for a few minutes while you prepare the vegetables.

Step 2: Cook the Vegetables

    1. Heat the Skillet: Place your cast iron skillet on the stove over medium-high heat and add 2 tablespoons of olive oil.

    1. Add Vegetables: Once the oil is hot, add the sliced bell peppers and onions. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred. Remove from the skillet and set aside.

Step 3: Cook the Shrimp

    1. Add to Skillet: Add the seasoned shrimp to the hot skillet.

    1. Cook Shrimp: Cook for about 2-3 minutes on each side, or until the shrimp are pink and cooked through. Squeeze lime juice over the shrimp while cooking for extra flavor.

Step 4: Combine and Serve

  1. Mix Together: Return the cooked vegetables to the skillet with the shrimp. Stir everything together to combine well.
  2. Warm Tortillas: In a separate skillet or on a griddle, warm the flour tortillas for about 30 seconds on each side until they are soft and pliable.

Step 5: Assemble the Fajitas

  1. Add Filling: Place a generous amount of the shrimp and vegetable mixture onto each tortilla.
  2. Garnish and Serve: Garnish with fresh cilantro and your favorite toppings like sour cream, avocado slices, salsa, or shredded cheese. Serve immediately and enjoy!
