  • ½ cup brown sugar
  • ½ cup soy sauce
  • ¼ cup apple cider vinegar
  • ½ teaspoon ground ginger
  • 2 cloves garlic, minced
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

  1. Add the chicken: Arrange the chicken breasts in an even layer in a 4-quart slow cooker.
  2. Make the teriyaki sauce: Whisk together the brown sugar, soy sauce, apple cider vinegar, ginger, garlic, and black pepper. Pour evenly over the chicken.
  3. Slow cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and reaches 165°F (74°C) internally.
  4. Shred the chicken: Remove the chicken from the slow cooker and shred with two forks. Set aside, keeping the cooking liquid in the slow cooker.
  5. Thicken the sauce: Whisk the cornstarch and cold water until smooth. Slowly stir the slurry into the hot cooking liquid. Cook until the sauce thickens.
  6. Coat the chicken: Return the shredded chicken to the slow cooker and stir until thoroughly coated with the thickened teriyaki sauce.
  7. Serve: Serve warm over rice with steamed or roasted vegetables, if desired.
