    • 1 oz (30–40 g) high-quality bottarga, finely grated (preferably with a Microplane just before using)

    • 34 tablespoons extra virgin olive oil, plus more for finishing

    • 1 garlic clove, thinly sliced

    • Zest of 1 lemon

    • 12 tablespoons fresh lemon juice (start with 1 and adjust)

    • 2 tablespoons chopped fresh parsley

    • 1 small red chili, thinly sliced (optional)

    • Salt (use sparingly — bottarga is already salty)

    • Freshly ground black pepper

Instructions

This elegant pasta comes together while the spaghetti cooks. The key is to work quickly so the pasta stays hot enough to absorb the flavors, and to add the bottarga only off the heat.

STEP 1 – Cook the Spaghetti Bring a large pot of generously salted water to a boil. Cook the spaghetti until just al dente, following the package directions (usually 1 minute less than the stated time). Before draining, reserve ¾ cup of the starchy pasta water.

Flash Tip: Pasta water is essential for creating a silky emulsion without cream. Keep extra on hand.

STEP 2 – Infuse the Olive Oil While the pasta cooks, heat 3–4 tablespoons of olive oil in a large skillet over low heat. Add the sliced garlic and optional chili. Cook gently for 1–2 minutes until fragrant and just barely golden—do not let it brown. Remove the garlic (and chili if you prefer milder flavor) with a slotted spoon and discard or set aside.

STEP 3 – Combine the Pasta Transfer the hot drained spaghetti directly into the skillet with the infused oil. Add the lemon zest, 1 tablespoon lemon juice, and 2–3 tablespoons of the reserved pasta water. Toss vigorously over low heat for 30–60 seconds, adding more pasta water a tablespoon at a time until every strand is lightly coated in a glossy emulsion.

STEP 4 – Finish with Bottarga Remove the skillet from the heat. Sprinkle in the grated bottarga and chopped parsley. Toss gently until evenly distributed—the residual heat is all that is needed. Taste and season carefully with black pepper and only a pinch of salt if needed (the bottarga is already quite salty). Finish with an extra drizzle of extra virgin olive oil.

STEP 5 – Garnish & Serve Twirl the pasta into warm bowls. Top with extra grated bottarga, fresh lemon zest, parsley, and a lemon wedge. Serve immediately.
