2 c. Fresh Pumpkin or Butternut Squash cut into 1” cubes
1 c. Potato, cut into 1” cubes
1 lb. Chicken thighs, cut into bite size pieces
1 T. Hot paprika
1 T. Sriracha sauce
1/2 t. Chili flakes
1/4 c. Extra virgin olive oil
Sea Salt, to taste
For Serving: Steamed Rice & Broccoli (Optional)
Instructions
1 Preparation:
◦ Gather all ingredients and kitchen equipment.
◦ Wash and dice the pumpkin and potatoes into small, even cubes for consistent cooking.
◦ Cut the chicken into uniform pieces if not pre-cut.
2 Marination:
