- 1 package of pre-made pie crust (or homemade if preferred)
- 6 large eggs
- 1/4 cup milk (any variety)
- 1 cup chopped spinach (fresh or frozen, thawed and drained)
- 1/2 cup shredded cheese (such as cheddar, mozzarella, or Swiss)
- 1/4 cup diced onion
- 1/4 cup diced bell pepper (any color)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or olive oil for greasing muffin tin

- Preheat your oven to 375°F (190°C). Roll out the pie crust and use a round cutter or glass to cut out circles slightly larger than the size of your muffin tin cups.

- Grease a 12-cup muffin tin with cooking spray or olive oil, then gently press the pie crust circles into each cup, forming mini pie crusts.

- In a large mixing bowl, crack the eggs and whisk them together until well beaten.

- Stir in the milk, chopped spinach, shredded cheese, diced onion, diced bell pepper, salt, and black pepper into the egg mixture until everything is evenly combined.

- Spoon the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.

- Bake in the preheated oven for 18-20 minutes, or until the quiches are set and lightly golden brown on top.

- Remove the muffin tin from the oven and let the quiches cool for a few minutes before carefully removing them from the tin.
