Ingredients

    1. Whole Grain Baguette - 1 small baguette (sliced into 1/2-inch thick slices)

    1. Zucchini - 1 medium zucchini (sliced thinly)

    1. Carrot - 1 medium carrot (grated)

    1. Fresh Mozzarella Cheese - 1 cup (cubed or torn into small pieces)

    1. Cherry Tomatoes - 1/2 cup (halved)

    1. Fresh Basil - 1/4 cup (chopped)

    1. Olive Oil - 2 tablespoons (plus more for drizzling)

    1. Garlic - 1-2 cloves (minced)

    1. Balsamic Vinegar - 1 tablespoon (optional for drizzling)

    1. Salt - to taste

    1. Black Pepper - to taste


Instructions

Step 1: Prepare the Ingredients

  1. Slice the Baguette: Take the whole grain baguette and cut it into 1/2-inch thick slices. Aim for about 12 slices, depending on the size of your baguette.
  2. Prepare the Vegetables:

    • Zucchini: Wash and trim the ends of the zucchini, then slice it thinly (about 1/8-inch thick).
    • Carrot: Peel the carrot and grate it using a box grater or a food processor.

  3. Chop the Basil: Rinse the fresh basil leaves, pat them dry, and chop them roughly.
  4. Prep the Cherry Tomatoes: Wash the cherry tomatoes and slice them in half.

Step 2: Toast the Baguette

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Arrange the Baguette Slices: Place the sliced baguette on a baking sheet in a single layer.
  3. Drizzle with Olive Oil: Brush each slice lightly with olive oil to help them toast and crisp up in the oven.
  4. Toast: Bake in the preheated oven for about 5-7 minutes until the edges start to turn golden brown. Keep an eye on them to avoid burning.

Step 3: Prepare the Topping

  1. Mix the Topping Ingredients: In a large mixing bowl, add the sliced zucchini, grated carrot, cubed fresh mozzarella, halved cherry tomatoes, and chopped basil.
  2. Add Garlic: Mince 1-2 cloves of garlic and add them to the bowl with the other ingredients.
  3. Season: Drizzle with 2 tablespoons of olive oil and season with salt and black pepper to taste. Gently toss all the ingredients together until well combined.

Step 4: Assemble and Serve

 

  1. Remove the Baguette: Take the toasted baguette slices out of the oven and let them cool for a minute.
  2. Top the Baguette: Spoon the zucchini and carrot mixture generously onto each slice, spreading it out evenly.
  3. Optional Drizzle: If desired, drizzle a little balsamic vinegar over the topped bruschetta for added flavor.
