Instructions
Step 1: Prepare the Ingredients
- Slice the Baguette: Take the whole grain baguette and cut it into 1/2-inch thick slices. Aim for about 12 slices, depending on the size of your baguette.
- Prepare the Vegetables:
- Zucchini: Wash and trim the ends of the zucchini, then slice it thinly (about 1/8-inch thick).
- Carrot: Peel the carrot and grate it using a box grater or a food processor.
- Chop the Basil: Rinse the fresh basil leaves, pat them dry, and chop them roughly.
- Prep the Cherry Tomatoes: Wash the cherry tomatoes and slice them in half.
Step 2: Toast the Baguette
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Arrange the Baguette Slices: Place the sliced baguette on a baking sheet in a single layer.
- Drizzle with Olive Oil: Brush each slice lightly with olive oil to help them toast and crisp up in the oven.
- Toast: Bake in the preheated oven for about 5-7 minutes until the edges start to turn golden brown. Keep an eye on them to avoid burning.
Step 3: Prepare the Topping
- Mix the Topping Ingredients: In a large mixing bowl, add the sliced zucchini, grated carrot, cubed fresh mozzarella, halved cherry tomatoes, and chopped basil.
- Add Garlic: Mince 1-2 cloves of garlic and add them to the bowl with the other ingredients.
- Season: Drizzle with 2 tablespoons of olive oil and season with salt and black pepper to taste. Gently toss all the ingredients together until well combined.
Step 4: Assemble and Serve
- Remove the Baguette: Take the toasted baguette slices out of the oven and let them cool for a minute.
- Top the Baguette: Spoon the zucchini and carrot mixture generously onto each slice, spreading it out evenly.
- Optional Drizzle: If desired, drizzle a little balsamic vinegar over the topped bruschetta for added flavor.
- Plate and Serve: Arrange the bruschetta on a serving platter. You can serve them warm or at room temperature. Enjoy your delicious Zucchini, Carrot, and Cheese Bruschetta as an appetizer or a light snack!
