Zucchini Mozzarella Omelette with Scallions Recipe

Ingredients

  • 6 large eggs
  • 1 medium zucchini, diced small or grated and squeezed dry
  • 1 cup shredded mozzarella cheese
  • 3 scallions, thinly sliced, plus more for garnish
  • 2 tablespoons milk or half-and-half
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried Italian seasoning or oregano

Instructions

Instructions

  1. Dice or grate the zucchini. If grating, squeeze out excess moisture with a clean towel or paper towel.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and Italian seasoning.
  3. Heat olive oil and butter in a large nonstick skillet over medium heat. Add zucchini and cook for 3–4 minutes until softened.
  4. Add most of the scallions and cook for 30–60 seconds. Save some scallions for garnish.
  5. Reduce heat to medium-low and pour the egg mixture evenly over the zucchini and scallions.
  6. Sprinkle mozzarella over the top. Cover and cook gently for 6–8 minutes, or until the edges are set and the center is almost cooked.
  7. If using an oven-safe skillet, broil for 1–2 minutes to lightly brown the top. Otherwise, continue cooking covered on low until fully set.
  8. Garnish with extra scallions, slice into wedges, and serve warm.
