2 pounds (680g) ground beef (85% lean)

1 cup fresh breadcrumbs

1 cup grated Parmesan cheese

½ cup milk

2 large eggs, beaten

1 small onion, finely chopped

½ cup finely diced bell pepper (red or green)

½ cup canned petite diced tomatoes, drained

2 tablespoons dried parsley

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

½ teaspoon black pepper

 

For the Glaze:

½ cup ketchup

2 tablespoons balsamic vinegar

2 tablespoons brown sugar

1 teaspoon dried Italian seasoning


Instructions

Preheat your oven to 350°F (175°C). Prepare a 9x13 casserole dish with nonstick cooking spray.

 

In a large mixing bowl, combine all the ingredients together for the meatloaf. Mix the ingredients thoroughly until well combined.

 

Transfer the meat mixture onto the prepared casserole dish and shape it into a loaf, making sure it's evenly distributed in the pan.

 

Place the meatloaf in the preheated oven and bake for approximately 1 hour, or until the internal temperature reaches 160°F (71°C) using a meat thermometer.

 

In a small bowl, mix together the ketchup, balsamic vinegar, brown sugar, and dried Italian seasoning. This glaze will add a sweet and tangy flavor to the meatloaf.

 

Spoon the glaze generously over the top and sides of the meatloaf. Return the meatloaf to the oven for 5 to 10 minutes or until the glaze begins to caramelize.

 

Remove the meatloaf from the oven and allow it to rest for about 10 minutes before slicing. This resting time helps the juices redistribute, keeping the meatloaf moist.

 

Slice the Italian meatloaf into thick slices and serve it with your favorite side dishes, such as pasta, mashed potatoes, roasted vegetables, or a crisp salad.
