Ingredients

    • 2 pounds ground beef (85% lean)

    • 1 cup fresh breadcrumbs

    • 1/2 cup grated Parmesan cheese

    • 1/2 cup milk

    • 2 large eggs, beaten

    • 1 medium onion, finely chopped

    • 1 cup bell peppers (red or green), finely chopped

    • 1 can (14.5 ounces) petite diced tomatoes, drained

    • 2 tablespoons dried parsley

    • 3 cloves garlic, minced

    • 1 teaspoon dried oregano

    • 1 teaspoon dried basil

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

For the Glaze:

    • 1/2 cup ketchup

    • 2 tablespoons balsamic vinegar

    • 2 tablespoons brown sugar

    • 1 teaspoon dried Italian seasoning


Instructions

    1. Preheat the oven:
        • Preheat your oven to 375°F (190°C).

    1. Prepare the meatloaf mixture:
        • In a large bowl, combine ground beef, fresh breadcrumbs, grated Parmesan cheese, milk, beaten eggs, chopped onion, chopped bell peppers, drained petite diced tomatoes, dried parsley, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    1. Form the meatloaf:
        • Shape the meat mixture into a loaf and place it in a greased baking dish or on a baking sheet lined with parchment paper.

    1. Make the glaze:
        • In a small bowl, whisk together ketchup, balsamic vinegar, brown sugar, and dried Italian seasoning until smooth.

    1. Apply the glaze:
        • Spread half of the glaze evenly over the top of the meatloaf.

    1. Bake:
        • Bake in the preheated oven for 45 minutes. After 45 minutes, spread the remaining glaze over the meatloaf and continue baking for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).

    1. Rest and serve:
        • Allow the meatloaf to rest for 10 minutes before slicing. Serve warm.
