Ingredients

  • For healthy breaded fried zucchini sticks, you'll need: 
  • - 1 egg, beaten; 
  • - ¼ cup gluten-free breadcrumbs
  • - ¼ teaspoon garlic powder; 
  • - ¼ teaspoon salt; 
  • - ⅛ teaspoon black pepper; 
  • - ¼ cup grated Parmesan cheese; 
  • - 2 medium zucchini, cut into 3-inch strips. 


Instructions

  • Preheat the oven to 425 degrees F (220 degrees C). 
  • - In a shallow bowl, whisk together egg, garlic powder, salt, and black pepper. 
  • - In another shallow bowl, mix together bread crumbs and Parmesan cheese. 
  • - Dip zucchini strips in the egg mixture, then coat with the bread crumb mixture. 
  • - Place on a lightly greased baking sheet. 
  • - Bake for 20 minutes in the preheated oven, or until golden brown. Serve with ranch dressing or marinara sauce. Enjoy!
