Sauteed zucchini, bell pepper, mushroom, and corn is a delicious and nutritious side dish that is perfect for any meal. To prepare this dish, simply chop the zucchini, bell pepper, and mushrooms into bite-sized pieces and toss them in a hot skillet with a dash of oil.
-2 zucchinis, sliced into rounds
-1 bell pepper, thinly sliced
-8 oz mushrooms, sliced
-1 cup frozen corn kernels
Note: can always susstitute corn with another vegetable.
- In a large skillet or wok over medium heat, saute the zucchini, bell pepper, and mushrooms for 5-7 minutes, until tender.
- Add the corn kernels and continue to cook for 2-3 minutes, until heated through.
- Serve immediately with your favorite rice or pasta dish. Enjoy!
