Ingredients

    • 1 cup shredded reduced-fat cheddar cheese

    • 1/2 cup diced tomatoes, drained

    • 1/4 cup diced green chilies

    • 1/4 cup finely chopped onion

    • 1 clove garlic, minced

    • 1/2 teaspoon ground cumin

    • 1/4 teaspoon chili powder

    • Salt and pepper to taste

    • Optional: chopped cilantro or green onions for garnish


Instructions

    1. Heat a non-stick skillet over medium heat.

    1. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent and fragrant.

    1. Reduce the heat to low and add the diced tomatoes and green chilies to the skillet. Cook for another 2-3 minutes, stirring occasionally.

    1. Add the ground cumin and chili powder to the skillet, stirring well to combine with the onion, garlic, tomatoes, and chilies.

    1. Next, add the plain Greek yogurt to the skillet, stirring continuously until it's fully incorporated with the other ingredients.

    1. Gradually sprinkle in the shredded reduced-fat cheddar cheese, stirring constantly to melt the cheese and create a smooth, creamy texture.

    1. Once the cheese has melted and the dip is smooth and heated through, season with salt and pepper to taste.

    1. Remove the skillet from the heat and transfer the queso dip to a serving bowl.

    1. Garnish with chopped cilantro or green onions, if desired.

    1. Serve the queso dip warm
