Cherry Pecan “Nice” Cream

This recipe will be ready to serve within 10 minutes and will have a consistency similar to soft-serve ice cream. However, if you would like a firmer texture, pour the mixture into a freezer-safe container and place it in the freezer until it reaches the desired consistency.



4 large ripe bananas, sliced and frozen
1-2 tablespoon honey1 teaspoon real vanilla extract
¼ teaspoon salt
½ cup coconut milk (see notes above)
1 cup frozen dark cherries, rinsed briefly under warm water, and chopped
½ cup pecans, chopped additional chopped pecans, for garnish



  • Put the frozen bananas, honey, vanilla extract, and salt into a blender. Add milk and blend on high until smooth, for about 2-3 minutes.

If you need more liquid, add milk or cream, one tablespoon at a time, while blending until smooth.

  • Put the mixture in a large bowl. Add the chopped cherries and pecans. Put it in individual bowls. Top it with some more chopped pecans. Eat it now or put it in the freezer to eat later.
