Chicken Cordon Bleu Pasta Bake

Description

Get ready to indulge in the ultimate comfort food with this Chicken Cordon Bleu Pasta Bake. This dish takes all the classic flavors of the beloved Chicken Cordon Bleu and combines them into a rich and creamy pasta bake that will warm the hearts and bellies of everyone at the table.


Ingredients

1 T. Olive oil
1 T. Unsalted butter
2 Medium shallots, finely diced
2 Medium garlic cloves, minced
10 oz. chicken breast, cubed
1/2 c. Cooked ham, diced
3 c. Chicken stock, low sodium preferred
7 oz. Small pasta, such as ditalini or small shells
1/2 c. Heavy cream
6 oz. Swiss cheese, grated, divided
3 T. Panko breadcrumbs
1/4 c. Fresh parsley, chopped
Sea salt and black pepper, to taste


Instructions

  1. Preheat oven to 400˚F.

  2. Heat olive oil and butter in a large, oven-safe skillet over medium heat. 

  3. Add shallots and garlic. Season to taste with salt and pepper. 

  4. Cook, stirring occasionally, until shallots begin to soften, 2-3 minutes.

  5. Add chicken and cook, stirring occasionally, just until the chicken develops a bit of color, another 2-3 minutes.

  6. Add ham and chicken stock.

  7. Increase heat to high and bring to a boil. 

  8. Once the stock begins to boil, add pasta and decrease the heat until it reaches a steady simmer. 

  9. Cover and cook pasta until pasta is al dente, 10-12 minutes. Stir occasionally to prevent pasta from sticking. 

  10. Uncover and stir in heavy cream. Taste and adjust the seasoning as required. 

  11. Stir in half of the Swiss cheese.

  12. Top with remaining Swiss cheese and sprinkle with breadcrumbs.

  13. Place in oven and bake just until the cheese is melted, and the breadcrumbs become lightly browned, 8-10 minutes. 

  14. Remove from the oven and sprinkle with fresh parsley. Enjoy!
