Optional Toppings:

    • Whole wheat buns: 4, if serving as burgers

Instructions

Directions

Step 1: Prepare the Chicken Patties

  1. Mix Ingredients: In a medium-sized mixing bowl, combine the ground chicken, breadcrumbs, egg, garlic powder, onion powder, dried oregano, salt, and pepper. Use your hands or a spoon to mix until all ingredients are thoroughly combined.
  2. Form the Patties: Divide the chicken mixture into four equal portions. Using your hands, form each portion into a patty shape, about 1/2 inch thick. Place the patties on a plate or a piece of parchment paper.

Step 2: Cook the Chicken Patties

  1. Heat the Oil: In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium heat.
  2. Cook the Patties: Once the oil is hot, carefully place the chicken patties into the skillet. Cook each patty for about 5-6 minutes on one side until golden brown, then flip and cook for another 5-6 minutes on the other side. Check for doneness by ensuring the internal temperature of the patties reaches 165°F (74°C).
  3. Remove and Rest: Once cooked through, remove the patties from the skillet and let them rest on a clean plate while you prepare the salsa.

Step 3: Prepare the Avocado Corn Salsa

  1. Prepare the Corn: If using fresh corn, slice the kernels off the cob. If desired, you can also lightly cook the corn in the skillet used for the patties for about 3-4 minutes for added flavor.
  2. Mix Salsa Ingredients: In a large bowl, combine the diced avocados, corn kernels, cherry tomatoes, red onion, and chopped cilantro. Add the lime juice, and season with salt and pepper to taste.
  3. Toss the Salsa: Gently toss the ingredients together until well mixed, being careful not to mash the avocados too much.

Step 4: Assemble and Serve

  1. Prepare to Serve: If using, lay a lettuce leaf on each serving plate or slice the whole wheat buns in half.
  2. Assemble the Dishes: Place one chicken patty on each lettuce leaf or bun bottom. Top generously with the avocado corn salsa.
  3. Finish and Enjoy: Serve immediately while the patties are warm. If using buns, place the bun tops on the salsa-topped patties.
