- Prep the Waffle Iron: Preheat your waffle iron. Every waffle iron is different, so follow your manufacturer’s instructions. Mine makes two big waffles at a time, and I use about ¾ cup of batter per waffle.

- Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt. This is where the magic starts!

- Separate the Eggs: Here’s my little trick for super fluffy waffles—separate the egg whites from the yolks. Place the whites in one bowl and the yolks in another.

- Beat the Egg Whites: Use a hand mixer to beat the egg whites until stiff peaks form. This takes about 3 minutes and makes the waffles light and airy.

- Combine Wet Ingredients: In the bowl with the egg yolks, mix in the milk, melted butter, and cold coffee (or milk). Stir until smooth.

- Bring It All Together: Pour the wet ingredients into the dry ingredients and mix until just combined. Then, gently fold in the beaten egg whites with a spatula. Don’t overmix—it’s okay if the batter looks a little lumpy.

- Cook the Waffles: Spray your waffle iron with nonstick cooking spray and pour in the batter. Cook until the waffles are golden brown and crisp. The smell alone will have everyone gathered in the kitchen!

- Make the Hard Sauce (Optional): While the waffles cook, stir together the softened butter, confectioners’ sugar, vanilla extract, and milk until smooth. This sauce is like a sweet, buttery hug for your waffles.
