Batter:

    • 3 large eggs (room temperature)

    • ½ cup (120 ml) milk (whole, 2%, or oat milk)

    • ½ cup (65 g) all-purpose flour

    • 1 Tbsp granulated sugar

    • ¼ tsp salt

    • ½ tsp vanilla extract

    • 2 Tbsp unsalted butter

Apple topping:

    • 1 large apple (Honeycrisp, Fuji, or Granny Smith), thinly sliced

    • 1 Tbsp butter

    • 1 Tbsp brown sugar

    • ¼ tsp cinnamon

    • Pinch nutmeg or cardamom (optional)

For serving:
Powdered sugar • Maple syrup • Lemon wedge • Whipped cream (optional)


Instructions

👩‍🍳 STEP-BY-STEP INSTRUCTIONS

  1. Preheat oven and skillet.
    Place your 10″ cast-iron skillet in the oven. Preheat to 425 °F (220 °C). Let it heat for at least 10 minutes.
  2. Sauté the apples.
    In a small pan, melt 1 Tbsp butter, then add apple slices, brown sugar, cinnamon, and nutmeg. Sauté 3–4 minutes until softened but not mushy. Set aside.
  3. Blend the batter.
    Combine eggs, milk, flour, sugar, salt, and vanilla in a blender. Blend 20 seconds until smooth (or whisk by hand until lump-free). Let rest 2–3 minutes.
  4. Butter the hot skillet.
    Remove skillet carefully (oven mitts!). Add 1 Tbsp butter, swirling until melted and bubbly.
  5. Assemble and bake.
    Spread sautéed apples evenly on bottom of pan. Pour batter over apples.
    Bake 20–25 minutes until puffed, golden brown, and edges are crisp.
  6. Finish and serve.
    It’ll deflate slightly — normal! Dust with powdered sugar, squeeze lemon juice, drizzle maple syrup, and serve immediately.
